Vegetarian Faijtas
Vegetarian fajitas are a flavorful and satisfying dish, packed with colorful veggies and bold spices. Here's a simple recipe to get you started:
Ingredients:
- 2 bell peppers (any color), sliced
- 1 large onion, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Juice of 1 lime
- 8-10 small flour tortillas
- Optional toppings: shredded cheese, salsa, guacamole, sour cream, chopped cilantro
Instructions:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced bell peppers and onion to the skillet and sauté until they begin to soften, about 5-7 minutes.
Add the sliced zucchini and yellow squash to the skillet and continue to cook for another 5 minutes, or until all the vegetables are tender-crisp.
In a small bowl, mix together the minced garlic, chili powder, cumin, smoked paprika, salt, pepper, and the juice of 1 lime.
Push the vegetables to one side of the skillet and add the remaining tablespoon of olive oil to the empty side. Pour the spice mixture into the oil and let it cook for about 30 seconds, until fragrant.
Toss the vegetables with the spice mixture until evenly coated. Cook for an additional 1-2 minutes to allow the flavors to meld together.
Warm the flour tortillas in a separate skillet or in the microwave.
Serve the vegetarian fajita filling warm in the tortillas, along with your choice of toppings such as shredded cheese, salsa, guacamole, sour cream, and chopped cilantro.
