Simple Eggplant Pizza

 


Eggplant pizza is a tasty and low-carb alternative to traditional pizza crust. Here's a simple recipe for you:

Ingredients:

  • 1 large eggplant
  • Olive oil
  • Salt and pepper to taste
  • Pizza sauce
  • Shredded mozzarella cheese
  • Toppings of your choice (such as sliced bell peppers, onions, mushrooms, olives, cherry tomatoes, basil, etc.)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash the eggplant and slice it into rounds, about 1/2 inch thick.
  3. Place the eggplant slices on a baking sheet lined with parchment paper. Brush both sides of each slice with olive oil and season with salt and pepper.
  4. Bake the eggplant slices in the preheated oven for about 10-15 minutes, or until they are tender but not mushy.
  5. Remove the eggplant slices from the oven and let them cool slightly.
  6. Spread a thin layer of pizza sauce on each eggplant slice.
  7. Sprinkle shredded mozzarella cheese over the pizza sauce.

  10. Remove from the oven and let cool for a minute or two before serving.
