Ingredients:
- 1 large eggplant
- Olive oil
- Salt and pepper to taste
- Pizza sauce
- Shredded mozzarella cheese
- Toppings of your choice (such as sliced bell peppers, onions, mushrooms, olives, cherry tomatoes, basil, etc.)
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash the eggplant and slice it into rounds, about 1/2 inch thick.
