Salmon & Hummus Bowl


 A Salmon Hummus Bowl is a delightful and nutritious meal option. Here's a simple recipe to create one:

Ingredients:

For the Salmon:

  • 2 salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving (optional)

For the Hummus:

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Water (as needed to achieve desired consistency)

For the Bowl Assembly:

  • Cooked quinoa, rice, or couscous (about 1 cup per serving)
  • Mixed salad greens or spinach
  • Sliced cucumber
  • Sliced cherry tomatoes
  • Sliced red onion
  • Sliced avocado
  • Crumbled feta cheese (optional)
  • Fresh herbs (such as parsley or dill) for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Pat the salmon fillets dry with paper towels. Rub them with olive oil and season with salt and pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Remove from the oven and set aside.
  4. While the salmon is baking, prepare the hummus. In a food processor, combine the chickpeas, minced garlic, tahini, lemon juice, olive oil, salt, and pepper. Blend until smooth, adding water as needed to achieve your desired consistency. Adjust seasoning to taste.

  6. Top each bowl with a generous scoop of hummus.
  7. Arrange the mixed salad greens or spinach, sliced cucumber, cherry tomatoes, red onion, avocado, and crumbled feta cheese (if using) around the hummus.
  8. Place a baked salmon fillet on top of each bowl.
  9. Garnish with fresh herbs and serve immediately, with lemon wedges on the side if desired.
